As for the oat flour, I prefer using oat to whole wheat because it's just as healthy but I personally think it tastes better. It's probably more personal preference than anything, but I don't really like whole wheat, or buckwheat, for pancakes because it seems too heavy. Do you think it would work for me to use whole wheat flour instead of the white and oat flour mixture?
